Allow the logs to cool in the pan until just cool enough to touch, about 5 minutes. With a sharp knife, cut them on diagonal into 3/4- inch biscotti. Turn them on their sides with the cut side facing down and bake until crisp, 8-10 more minutes. Allow to cool 5-10 minutes in the pan, then transfer to a wire rack to cool completely.
