Heat a Dutch oven over medium heat, and fry the bacon for 8 minutes or until crispy. Drain on a paper towel–lined plate, then dice into bite-sized pieces. In the same Dutch oven, add onion, celery, salt, and pepper along with the bacon fat. Cook for 5 minutes or until softened. Stir in the beer and simmer, for 2 minutes, while deglazing any brown bits from the bottom of the pan. Add bread, a cup of cheddar cheese, thyme, and half of the cooked bacon and toss to combine. Add broth, Worcestershire, and eggs and mix together fully. Transfer the stuffing to a buttered baking dish and sprinkle with the remaining cheese and bacon. Cover with a lightly greased sheet of aluminum foil and bake for 45-50 minutes. Rest for 10 minutes before serving, and garnish with minced parsley.
