      • 20 Baby Artichokes (Trimmed)
      • 8 Cloves Garlic (Minced)
      • 1 Cup Fresh Parsley (Finely Chopped)
      • 1/4 Cup Extra Virgin Olive Oil
      • 2 Large Lemons (Zested & Juiced)
      • 1 Medium Lemon (Quartered)
      • 1 Teaspoon Salt & Freshly Ground Black Pepper


  1. Cut the artichokes in half and add to a bowl filled with water and lemon juice. Soak for 5-10 minutes. Drain and toss with 2 tablespoons of olive oil.
  2. Add remaining oil to a cast iron pan, over medium-high heat and sauté garlic until aromatic. Add artichokes and sauté for 5 minutes, flip, season and sauté for another 5 minutes.
  3. Transfer the sautéed artichokes to a large bowl and add lemon zest, lemon slices and parsley. Toss well and serve.
