Stir in the water, seasoned salt, red pepper flakes, and ham hocks and bring to a boil and reduce to a simmer for one hour. Add remaining lard, chopped collard greens, wine and sugar. Bring to a boil again, and reduduce to simmer for another hour. Remove the ham hocks from the stockpot, and allow to cool for a few minutes. Debone the ham hocks, and shred the meat. Return to the collard greens and stir to combine.
