Smoked Sausage and Bean Cassoulet Recipe

      • 2 Slices Bacon
      • 2 Cups Onion (Chopped)
      • 2 Cloves Garlic (Minced)
      • 1 Teaspoon Dried Thyme
      • 1/2 Teaspoon Dried Rosemary
      • 1/2 Teaspoon Salt & Freshly Ground Black Pepper
      • 2 Cans Diced Tomatoes (14.5 Ounces Each, Drained)
      • 2 Cans Great Northern Beans (15 Ounces Each, Rinsed & Drained)
      • 1 Pound Lean Boneless Pork Loin Roast (Trimmed & Cut Into 1-Inch Cubes)
      • 1/2 Pound Smoked Sausage (Sliced)
      • 8 Teaspoon Fresh Parmesan Cheese (Finely Shredded)


  1. In a large cast-iron skillet over medium heat, cook bacon until crisp. Remove bacon from pan leaving drippings. Add onion, garlic thyme, rosemary, and garlic to the pan and sauté until tender, about 4 minutes. Crumble bacon and add back into the skillet as well as salt, pepper, and tomatoes; bring to a boil. Remove from heat.
  2. In a large bowl, add half of the beans and mash with a potato masher until a chunky consistency forms. Transfer to a crockpot. Add the remaining beans, pork, sausage, and tomato mixture and stir well.
  3. Cover and cook on low setting for 6-8 hours. Transfer to serving bowls and sprinkle a teaspoon of parmesan on each bowl.
