Greek Yogurt Chicken Salad Recipe

      • 1 Cup Nonfat Greek Yogurt
      • 1 Avocado (Mashed)
      • 1 1/2 Tablespoons Fresh Lemon Juice
      • 1/4 Teaspoon Salt & Freshly Ground Black Pepper (Or More, To Taste)
      • 2 Large Boneless & Skinless Chicken Breasts (Cooked & Diced)
      • 3/4 Cup Celery (Diced)
      • 1/2 Cup Red Grapes (Halved)
      • 1/3 Cup Pecans (Chopped)
      • 1/3 Cup Red Onion (Chopped)
      • 1/3 Cup Dried Cranberries
      • 2 Tablespoons Fresh Tarragon (Minced)


  1. Add the diced chicken with the chopped celery, grapes, pecans, red onion, tarragon and cranberries to a large bowl.
  2. Whisk together yogurt, lemon juice and avocado in a small bowl. Season with salt & pepper and set the dressing aside.
  3. In a large bowl, combine remaining ingredients and pour yogurt mixture over the salad, and toss to combine and serve as a simple salad or sandwich filling.
