Ingredients

      • 14 Pound Turkey (Fresh Is Best, Defrosted If Frozen)
      • 1 Small Bunch Fresh Sage (Minced)
      • 1 Stick Unsalted Butter (Cut Into Pieces)
      • 4 Teaspoons Kosher Salt
      • 1 Teaspoon Freshly Ground Black Pepper
      • 1 Medium Onion (Quartered)
      • 6 Large Garlic Cloves

Directions

  1. Place oven rack in middle position and preheat oven to 350 degrees.
  2. In a large roasting pan with a rack, arrange turkey with the breast side up.
  3. In the bowl of a food processor, combine the sage, butter, salt, pepper, onion & garlic and pulse until smooth.
  4. Gently rub 1/2 of the seasoned butter under the skin of the turkey breast. Rub the remaining seasoned butter on the outside & inside of the bird.
  5. Roast turkey until golden brown and a meat thermometer in the inner thigh and thickest part of the breast registers 165 degrees, normally about 3 to 3 1/4 hours.
  6. Allow bird to rest at least 20 minutes before carving.
