Ingredients

      • 4 Salmon Steaks (1-Inch Thick)
      • 1 Bay Leaf
      • 1/2 Lemon (Sliced)
      • 1 Small Onion (Sliced)
      • 1/2 Teaspoon Salt (Divided)
      • 3/4 Cup Milk
      • 1 Tablespoon All-Purpose Flour
      • 1/2 Teaspoon Dill Weed
      • 1 Tablespoon Lemon Juice
      • 2 Teaspoons Mustard Seed
      • 1/4 Teaspoon Lemon Rind (Grated)
      • 1/4 Teaspoon White Pepper
      • 1 Egg Yolk (Beaten)
      • Fresh Dill Sprigs (For Garnish)

Directions

  1. Place salmon steaks in a skillet and add enough water to cover the steaks. Top with bay leaf, lemon slices, and onion. Season with 1/4 teaspoon of salt and bring to a boil. Cover and let simmer on low until fish is flaky, for about 8 minutes.
  2. In a saucepan, combine milk and flour with constant stirring over low heat. Add dill, mustard, lemon rind, 1/4 teaspoon salt and pepper. Let cook, with constant stirring until thickened.
  3. Gradually add about 2 to 3 tablespoons of milk mixture to the egg yolk, whisk and stir back to the simmering flour mixture. Cook for a minute or so with constant stirring. Add lemon juice and immediately remove from heat.
  4. Transfer salmon steaks to the serving plates. Pour the sauce over, garnish with dill weed sprigs and serve.
