Ingredients

      • 2 Tablespoons Extra-Virgin Olive Oil
      • 4 Cloves Garlic (Minced)
      • 1 Tablespoon Dried Oregano
      • 1 1/2 Teaspoons Onion Powder
      • 1 Teaspoon Smoked Paprika
      • 1 Tablespoon Kosher Salt
      • 3 Pounds Boneless Rump Roast
      • 2 Cups Beef Stock
      • 4 Soft Italian-Style Hoagie Rolls
      • 1 Cup Spicy Celery Giardiniera (Recipe Associated)
      • 1/4 Pound Smoked Provolone Cheese (Sliced)

Directions

  1. Pat the roast and dry with paper towels. In a small bowl, combine the oil, minced garlic, oregano, onion powder, paprika, and salt & black pepper and mix until a smooth paste is formed. Season the roast evenly, and marinate for 4 hours or overnight in the refrigerator.
  2. Remove the roast from the refrigerator, and allow to rest at room temperature for at least 2 hours. Preheat the oven to 450 degrees.
  3. Bake the roast in the preheated oven for 30 minutes, and then lower the temperature to 325 degrees for 1 hour. Remove the roast to a clean cutting board and tent with aluminum foil and rest for 30 minutes, and carve into thin slices.
  4. Meanwhile, heat the roasting pan over medium-low heat, and stir in the beef stock making sure to scrape up any brown bits. Bring to a simmer, and stir in the sliced beef.
  5. Meanwhile, slice each roll in half lengthwise, and dunk in the au jus. To assemble the sandwich, pile a mound of beef on each hoagie roll and top giardiniera and a slice of provolone cheese.
