      • 1 Prepared Pie Shell (Prebaked For 10 Minutes In A 350 Degree Oven)
      • 3 Medium Zucchinis (Sliced)
      • 1/2 Pound Goat Cheese (Grated)
      • 4 Large Eggs (Beaten)
      • 1/4 Pound Mozzarella (Shredded)
      • 1 Onion (Diced)
      • 2 Tablespoons Extra Virgin Olive Oil
      • 1/4 Teaspoon Salt & Freshly Ground Black Pepper (Or More, To Taste)


  1. Preheat the oven to 350 degrees.
  2. Add oil to large saute pan, and heat over medium heat. Saute onions and zucchini for 10-15 minutes or until the vegetables soften. Season with salt and pepper. Allow the vegetables to cool completely.
  3. Combine the vegetable mixture, with the beaten eggs and cheese mixtures. Pour the mixture into the pastry shell and bake for 30 minutes, or until golden brown and delicous.
  4. Allow the pie to cool for 10-15 minutes before serving.
