      • 16 Small Figs
      • 16 Small Balls Of Fresh Mozzarella (Drained & Patted Dry)
      • 1 Medium Bell Pepper (Roughly Chopped)
      • 1 Medium Bundle Of Green Onion
      • 16 Dry Italian Salami

      • White Wine Marinade
      • 1/4 Cup White Wine Vinegar
      • 1 1/2 Teaspoons Honey
      • 1/2 Teaspoon Salt
      • 1/2 Teaspoon Red Pepper Flakes
      • 2 Tablespoons Fresh Parsley (Minced)
      • 2 Tablespoons Fresh Thyme (Minced)
      • 2/3 Cup Olive Oil

  1. Combine the wine vinegar, honey, salt, and pepper in a small bowl. Stir until honey and salt are dissolved. Add parsley, thyme, olive oil, and smashed garlic cloves. Stir until thoroughly combined.
  2. Divide marinate mixture into two equal portions. In one portion, add the figs and 1 tablespoon of water. Stir until thoroughly coated. In the second portion, add cheese to the marinade and stir until coated. Cover each bowl and place in refrigerator to chill for a minimum of 8 hours.
  3. When ready to assemble skewers, drain the figs and cheese. Reserve the marinade, removing the smashed garlic. For each skewer, alternate the figs, cheese, red bell pepper, green onion, and salami . For larger skewers, you can double each item.
  4. Right before serving, brush the skewers with a small amount of the reserved marinade.
