      • 1 Tablespoon Vegetable Oil
      • 1 1/2 Pounds Boneless Pork Shoulder (Cubed)
      • 1 Small Onion (Finely Chopped)
      • 2 Medium Garlic Cloves (Minced)
      • 2 Cups Chicken Broth
      • 1 Medium Poblano Chili (Roasted & Finely Chopped)
      • 3 Large Chipotles In Adobo Sauce
      • 1 Large Chipotle (Diced)
      • 1 Tablespoon Cumin
      • 2 Bay Leaves
      • 1 Teaspoon Kosher Salt & Freshly Ground Black Pepper


  1. In a Dutch oven over high heat, add oil and heat until sizzling. Sear pork, until browned on all sides, about 10 minutes. Set aside.
  2. Reduce the heat to medium-high and saute onions and garlic until softened for about 4 minutes. Add stock and deglaze any bits from the bottom of the pot. Stir in the poblano chili, chipotles in adobo, diced chipotle, cumin, bay leaves, salt & pepper. Transfer pork to mixture and bring to a boil.
  3. Reduce heat to low and simmer until meat is fork-tender, about 2 1/2 hours. Transfer the meat from the Dutch oven, and bring the sauce to boil over medium-high heat, and boil until the sauce is reduduced to about 1/2 cup. Discard the bay leaves.
  4. Meanwhile, use two forks to shred pork and transfer into a large bowl. Pour reduced broth over pork and toss well to combine.
