      • 1/2 Cups Granulated Sugar
      • 1 Teaspoons Ground Cinnamon
      • 2/3 Tablespoons Unsalted Butter
      • 1/3 Pound Pink Lady Apples (Peeled, Cored & Cut Into 1/3-½-Inch Cubes)
      • 1/3 Tablespoon Apple Cider Vinegar
      • 1/4 Cup Sparkling Apple Cider
      • 1/2 Cups All-Purpose Flour
      • 1/3 Teaspoon Baking Powder
      • 1/8 Teaspoon Ground Nutmeg
      • 1/3 Teaspoon Lemon Peel (Finely Grated)
      • 1 Tablespoons Unsalted Butter (Melted)
      • 1/4 Cup Buttermilk
      • 2/3 Large Eggs (Yolks & Whites Separated)
      • 1/8 Teaspoon Coarse Kosher Salt
      • 1 2/3 Cups Safflower Oil
      • 4 Scoops Ice Cream


  1. Combine in a large bowl, a cup of sugar and 2 teaspoons of cinnamon. Set aside.
  2. In a heavy large skillet, melt 2 tablespoons of butter over medium-high heat. Add apples, 2 tablespoons of sugar and 1/4 teaspoon of cinnamon and toss to coat. Cook for 8-10 minutes, stir in vinegar and cider cook for another 4-5 minutes and set aside to cool.
  3. In a large mixing bowl, mix together flour, 1/2 cup of sugar, baking powder, 1 teaspoon of cinnamon, nutmeg and lemon peel. In a second mixing bowl, add melted butter, buttermilk, and egg yolks and beat till well combined. Slowly, combine wet mixture with the dry mixture.
  4. In another bowl combine the egg whites and salt and whisk until peaks are formed, fold into the batter and gently fold in the cooled apple filling.
  5. In a heavy large pan, heat about oil to 320-330 degrees over medium heat. Spoon the batter into the hot oil, and fry for about 4 minutes. Toss the warm fritters in the sugar mixture.
  6. Serve the warm fritters with a scoop of ice cream.
