      • 1 Large Eggs (Beaten)
      • 2 Large Banana (Mashed)
      • 1 Cup Soy Milk
      • 1 Cup Rice Flour
      • 2 Teaspoons Baking Powder
      • 1/2 Teaspoon Salt
      • 1 Tablespoon Sugar
      • 1/4 Teaspoon Cinnamon
      • 1/4 Teaspoon Vanilla Extract


  1. In a medium bowl, combine and beat the banana, eggs and soy milk. In another bowl combine and stir the dry ingredients. Slowly add the dry ingredients to wet and stir until just combined.
  2. Spray a sauté pan with a thin layer of cooking spray. Ladle a scoop of batter into the heated pan, and cook for about 30 seconds. Flip, and cook for another 30 seconds.
  3. Serve with pancake syrup or honey if desired.
