      • 3 Cups Golden Raisins
      • 4 Tablespoons Dark Rum
      • 2 3/4 Cups Unsalted Butter
      • 1 Cup Granulated Sugar
      • 8 Cups All-Purpose Flour
      • 2 Packages Active Dry Yeast
      • 1 Teaspoon Salt
      • 1 Medium Lemon (Zested)
      • 2 Cups Milk
      • 1/2 Cup Candied Orange Peel (Finely Chopped)
      • 1/2 Cup Candied Lemon Peel (Finely Chopped)
      • 1/2 Cup Almonds (Finely Chopped)
      • 1/2 Teaspoon Ground Nutmeg
      • 1/4 Cup Powdered Sugar


  1. In a small bowl, add raisins & rum and allow to soak overnight.
  2. In a stand mixer, cream butter and sugar until fluffy. Gradually add flour, sugar, yeast, salt, milk, and mix until a smooth dough ball is formed.
  3. With dough hook attachment, add the candied fruit, almonds, nutmeg and raisins, one ingredient at a time and knead the dough well after each addition. Let dough set for 1 hour.
  4. Preheat oven to 350 degrees. Line a large sheet pan with Silpat or parchment paper and set aside.
  5. On a lightly floured work surface, knead the dough well and divide it into 2 equal- sized balls. Shape each dough ball into a loaf and arrange on sheet pan.
  6. Bake until lightly browned and a toothpick inserted in the center comes out clean, about 1 hour. Melt remaining butter and brush on the cooling loaves and dust with powdered sugar.
