      • 3 Large Russet Potatoes (Peeled & Diced)
      • 1/4 Cup Extra-Virgin Olive Oil
      • 2/3 Teaspoon Dried Oregano
      • 2/3 Teaspoon Garlic Powder
      • 2 Medium Lemons (Zested & Juiced)
      • 1/4 Cup Chicken Stock
      • 1 Teaspoon Salt & Freshly Ground Black Pepper


  1. Place a large sheet tray in the oven, and set the oven to 400 degrees.
  2. In a large bowl, combine the lemon juice & zest, chicken stock, herbs & spices with diced potatoes, and toss well to coat the potatoes.
  3. Transfer the potatoes to warmed sheet tray and roast for 60 minutes, turning the potatoes after 30 minutes of roasting.
