Ingredients

      • 2 Cups All-Purpose Flour
      • 1 Tablespoon Baking Powder
      • 1/2 Teaspoon Baking Soda
      • 1/2 Teaspoon Salt
      • 1/4 Cup Cold Unsalted Butter (Diced)
      • 1/2 Cup Leftover Mashed Sweet Potato

Directions

  1. Preheat oven to 425 degrees.
  2. In a large bowl, sift together the flour, baking powder, baking soda and salt.
  3. With a pastry cutter, cut the butter into the flour mixture until it resembles coarse corn meal.
  4. In a medium bowl, mix leftover sweet potatos and buttermilk until combined. Pour into the dry ingredients and stir until just combined.
  5. With a medium scoop, measure out 8-10 biscuits and arrange them in a 10-inch cast iron skillet or on an ungreased sheet pan.
  6. Bake until tops are golden brown, about 10-12 minutes.
