      • 4 Chicken Leg Quarters
      • 1/2 Tablespoon Salt & Ground Black Pepper
      • 3 Tablespoon Olive Oil
      • 3/4 Cup All-Purpose Flour
      • 2 Tablespoon Herbs De Provence
      • 1 Small Lemon
      • 1 Small Orange
      • 10 Cloves Garlic (Peeled)
      • 6 Medium Shallots (Peeled & Halved)
      • 19/64 Cup Dry Vermouth
      • 2 Pieces Sprigs Of Fresh Thyme (For Garnish)


  1. Preheat the oven to 400 degrees.
  2. Season chicken quarters with salt and pepper evenly.
  3. In a shallow dish, place flour. Coat each chicken piece with flour lightly, shaking to remove excess.
  4. In a large roasting pan, add oil and swirl it to coat evenly. Place the chicken in roasting pan and sprinkle with herbs de Provence. Arrange shallots, lemon and orange quarters and garlic cloves around the chicken pieces and top with vermouth.
  5. Roast for about 1 hour, basting with pan juice once halfway through.
  6. Remove from oven and serve with the garnish of the thyme sprigs.
