      • 10 Slices Bacon
      • 20 Large Sea Scallops
      • 1 Cup Whipping Cream
      • 2 Tablespoons Dijon Mustard
      • 2 Tablespoons Pure Maple Syrup
      • 1/2 Teaspoon Sea Salt & Freshly Ground Black Pepper
      • 1 Small Bunch Fresh Chives (Minced)


  1. Preheat the oven to 350 degrees.
  2. On a sheet pan, arrange bacon and bake until golden brown, about 8 minutes. Remove pan and let it cool. Increase oven to 400 degrees.
  3. With a knife, slice scallops crosswise and cut bacon slices in half. Wrap each scallop with bacon half and secure with a toothpick. On the same sheet pan, arrange the scallops and bake until completely cooked, about 10 minutes.
  4. Meanwhile, in a large saucepan on medium-high heat, add cream and cook until it reduces to about 3/4 cup, about 3 minutes. Stir in syrup and mustard and cook until sauce thickens, another 3 minutes. Season with salt and pepper.
  5. Divide sauce equally between 4 small serving plates. Remove and discard toothpicks. Arrange scallops onto serving plates and sprinkle with chives.
