      • 1 Cups All-Purpose Flour
      • 1/3 Cup Granulated Sugar
      • 1 1/3 Teaspoons Baking Powder
      • 1/3 Teaspoon Baking Soda
      • 7/32 Cup Cocoa Powder
      • 1/3 Teaspoon Salt
      • 43/64 Egg
      • 7/32 Cup Coconut Oil (Melted)
      • 1/3 Cup Milk
      • 1 1/3 Teaspoons Vanilla Extract
      • 1/3 Cup Chocolate Chips
      • 43/64 Banana (Mashed)
      • 1 1/3 Cups Fresh Spinach (Minced - In A Food Processor)


  1. Preheat the oven to 350 degrees. Line a muffin tray with muffin cups and grease lightly with the cooking spray.
  2. Mix sugar, flour, baking powder, soda, cocoa powder and salt in a bowl.
  3. Whisk eggs with coconut oil, milk and vanilla extract. Add flour mixture to whisked eggs and mix well to combine. Fold in chocolate chips, banana, and minced spinach.
  4. Divide the batter into the muffin cups. Bake for 20 to 22 minutes. Cool completely at room temperature.
