      • 4 Large Mangoes (Peeled & Diced)
      • 10 Small Green Cardamom Pods (Seeded)
      • 2 Small Limes (Zested & Juiced)
      • 1/4 Cup Powdered Sugar
      • 4 Tablespoons Brandy
      • 2 1/2 Cups Heavy Whipping Cream
      • 4 Meringue Cookies
      • 8 Small Mint Leaves


  1. In the bowl of a food processor, add 2 cups of mango and puree until smooth. Remove the bowl.
  2. With a spatula, fold in 1 cup of mango until blended. Spoon the mixture into 8 dessert glasses.
  3. In a spice grinder, grind cardamom seeds to a powder then transfer to a large bowl. Add the zest, juice, powdered sugar and brandy. Stir well.
  4. In the same bowl with a hand mixer on high-speed, add cream and whip mixture until it is fluffy and forming peaks. Fold in the cookies.
  5. Spoon the whipped cream over the mango puree in each glass. Top with remaining mango and mint sprigs. Chill until served.
