      • 1 Pound Fresh Bulk Chorizo
      • 1/2 Cup Butter
      • 1 Small Red Onion (Diced)
      • 1/2 Cup Celery (Diced)
      • 1/2 Cup Carrot (Diced)
      • 6 Cloves Garlic
      • 1/4 Cup Cilantro Leaves
      • 1 Tablespoon Thyme
      • 1 Tablespoon Sage (Minced)
      • 2 1/2 Cups Chicken Stock
      • 12 Cups Cornbread Dressing Mix
      • 2 Cups Water
      • 1 Teaspoon Salt & Pepper (To Taste)


  1. Brown the chorizo over medium heat until crumbly. Drain on paper towels. Set aside.
  2. Over medium heat, melt the butter. Stir in the vegetables, garlic and saute until slightly brown. Stir in the herbs and saute for an additional minute.
  3. Stir in the browned chorizo and 2 cups of water and bring to a boil and set aside.
  4. Combine the chorizo mixture with the dried cornbread stuffing mix and stir until well combined. Season with salt and pepper to taste and gradually pour in enough of the stock and transfer to a large baking dish.
  5. Preheat the oven to 450 and bake the casserole for about 10 minutes covered, and an additional 15 minutes uncovered.
