      • 8 Cups Water
      • 2 Large Lemons (1 Thinly Sliced, 1 Zested)
      • 2 1/4 Teaspoons Salt
      • 1 Pound Large Shrimp (Peeled & Deveined)
      • 2 Cups Fresh Basil Leaves
      • 12 Roasted Walnuts
      • 1/2 Teaspoon Freshly Ground Black Pepper
      • 1/2 Cup Extra-Virgin Olive Oil
      • 1 Large Shallot (Minced)
      • 5 Cups Baby Arugula
      • 1 Small Head Of Frisee (Torn)
      • 2 Cups Radicchio (Chopped)


  1. In a large saucepan, over medium-high heat, add water, sliced lemon & 1 1/2 teaspoon salt and bring to a simmer. Add the shrimp and cook until they are opaque, for about 3 minutes. Drain and set aside.
  2. In the bowl of a food processor, combine the basil, walnuts, lemon zest, and remaining salt & pepper and pulse until roughly chopped. Gradually drizzle in the olive oil until the mixture is smooth. Stir in the shallot and transfer the pesto to a large salad bowl.
  3. Toss the arugula, frisee & radicchio with the pesto, and arrange the shrimp on top and serve.
