      • 1 1/2 Pounds Boneless & Skinless Chicken Breasts (Sliced)
      • 1 Medium Onion (Sliced)
      • 2 Medium Bell Peppers (Seeded & Sliced)
      • 1/3 Cup Vegetable Oil
      • 2 Small Limes (Zested & Juiced)
      • 2 Teaspoons Chili Powder
      • 1 Teaspoons Ground Cumin
      • 3 Cloves Garlic (Minced)
      • 1/2 Tablespoon Salt & Freshly Ground Black Pepper
      • 8 Small Soft Flour Tortillas
      • 1 Cup Chucky Gaucamole (Recipe Associated)
      • 1 Cup Classic Cosina Salsa (Recipe Associated)


  1. Preheat the oven to 500 degrees and preheat a large rimmed baking sheet.
  2. In a large resealable plastic bag, combine the chicken, onions, peppers, oil, lime juice & zest, chili powder, cumin, garlic, salt & pepper and toss gently to coat. Marinate in the refrigerator for at least 20 minutes, up 2 hours.
  3. Remove the chicken from the marinade, and arrange the chicken and vegetables on the preheated baking sheet. Bake for about 10 minutes or until the chicken is thoroughly cooked. In the last few minutes of the bake time, wrap the flour tortillas in aluminum foil and warm in the oven.
  4. Serve the chicken with the warm tortillas and dollop of the guacamole and homemade salsa.
