      • 8 Leaves Butter Lettuce
      • 1 Cup Green Goddess Dressing (Recipe Associated)
      • 4 Ounces Goat Cheese (Softened)
      • 8 Slices Whole Wheat Bread (Toasted)
      • 1 Large Ripe Avocado (Peeled, Pitted & Sliced)
      • 2 Carrots (Shredded)
      • 3 Radishes (Shredded)
      • 1 Cucumber (Cut Into Paper-Thin Slices)
      • 1/2 Cup Sprouts
      • 2 Ripe Tomatoes (Sliced)
      • 1/8 Teaspoon Salt & Freshly Ground Black Pepper (Or More, To Taste)


  1. In a bowl, combine lettuce and some of the dressing and toss to coat well.
  2. Spread the goat cheese on 4 bread slices evenly and top each with avocado slices, followed by lettuce, shredded vegetables, cucumber, sprouts and tomatoes.
  3. Drizzle each slice with remaining dressing and sprinkle with salt and black pepper. Cover with the remaining slice to make sandwiches.
