      • 2 Tablespoons Sesame Seeds (Plus More For Coating)
      • 2/3 Cup All Purpose Flour
      • 1/2 Teaspoon Baking Powder
      • 1/4 Teaspoon Sweet Spanish Paprika
      • 2 Eggs (Separated)
      • 1/2 Cup Arzúa- Ulloa Cheese (Grated)
      • 1/4 Cup Cured Manchego Cheese (Grated)
      • Olive Oil (For Frying)
      • 1/4 Cup Honey (For Coating)


  1. Preheat the oven to 350 degrees. Line a baking sheet with a piece of foil.
  2. Spread 2 tablespoons of sesame seeds onto the prepared baking sheet. Roast for about 5-7 minutes.
  3. In a medium bowl, mix together flour, baking powder, paprika and salt.
  4. In another bowl, add egg whites and beat until stiff peaks form. Add sesame seeds, cheeses and egg yolks and mix until well combined.
  5. Divide mixture into 8 equal sized portions and arrange onto a foil-lined baking sheet in a single layer. Refrigerate for at least 30 minutes.
  6. Coat each cheese puff with extra sesame seeds evenly.
  7. In a skillet, heat oil and then deep fry for about 1-2 minutes or until golden brown. Transfer to a paper towel-lined plate to drain.
  8. Transfer the puffs onto a serving platter and drizzle with honey. Keep aside until honey is absorbed slightly before serving.
