      • 3 Cups Cooked Brown And/Or Brown Basmati Rice
      • 1 1/2 Cups Cooked Wild Rice
      • 1/2 Medium Cucumber (Seeded, Quartered Lengthwise And Sliced Into 1/4-Inch Slices)
      • 1/2 Medium Red Onion
      • 1 Medium Yellow Bell Pepper
      • 2 Stalk Celery (Cut Into 1/2-Inch Pieces)
      • 6 Ounces Red Cherry Tomatoes (Quartered)
      • 1 Tablespoon Olive Oil
      • 1/4 Teaspoon Dijon Mustard
      • 1 1/2 Teaspoons Balsamic Vinegar
      • 1 Teaspoon Coarse Salt
      • 1/4 Teaspoon Greek Black Olives


  1. Mix vegetables and rice in a bowl.
  2. To make dressing, whisk together olive oil, Dijon, balsamic, salt and pepper in a small bowl.
  3. Pour dressing over the salad, toss to combine and serve.
