      • 5 Pound Turkey Breasts
      • 1 Large Apple (Peeled, Cored & Diced)
      • 1/2 Cup Dried Cranberries
      • 1/2 Cup Walnuts
      • 1 Cup Mushrooms (Sliced)
      • 6 Slices Bacon (Diced)
      • 1 Tablespoon Fresh Rosemary (Minced)
      • 1/2 Tablespoon Fresh Thyme (Minced)
      • 1 Tablespoon Fresh Sage (Minced)
      • 1/4 Cup Vegetable Oil
      • 1 1/2 Teaspoons Salt & Freshly Ground Black Pepper


  1. Preheat the oven to 350 degrees. Meanwhile with a sharp knife butterfly the breast until it open flat. Wrap the breast in between sheets of plastic wrap and flatten with a meat mallet.
  2. In a bowl of a food processor, combine the apple, dried cranberries, walnuts, mushrooms, bacon and herbs and 1/2 teaspoon of salt and pepper, and pulse to combine.
  3. Spread the stuffing in a thin layer, up to 1/4 inch from the edge, on top of the turkey breast. Roll up the turkey breast and truss with cooking twine. Season with the remaining salt & pepper.
  4. Heat the oil in a large Dutch oven over medium high heat, and brown the turkey, about 3 minutes per side.
  5. Transfer the Dutch oven to the preheated oven, and bake for about 50 minutes. Allow the turkey rolls to rest for 10 minutes before serving.
