In a bowl of a food processor, combine the apple, dried cranberries, walnuts, mushrooms, bacon and herbs and 1/2 teaspoon of salt and pepper, and pulse to combine. Spread the stuffing in a thin layer, up to 1/4 inch from the edge, on top of the turkey breast. Roll up the turkey breast and truss with cooking twine. Season with the remaining salt & pepper. Heat the oil in a large Dutch oven over medium high heat, and brown the turkey, about 3 minutes per side. Transfer the Dutch oven to the preheated oven, and bake for about 50 minutes. Allow the turkey rolls to rest for 10 minutes before serving.
