Warm Tortellini and Cherry Tomato Salad Recipe

Utilizing store-bought cheese tortellini, vegetables and some basic pantry staples you can make this amazing dish in just a few minutes. For a more substantial dish, add quartered and grilled Italian sausage links. This antipasti style salad, is a substantial first course, or a great light lunch. This salad also works great on a Itilian buffet.

      • 1 Pound Storebought Fresh Cheese Tortellini
      • 14 Ounces Marinated Artichoke Hearts (Drained & Quartered)
      • 1 1/2 Cups Fresh Asparagus (Trimmed & Diced)
      • 3 Tablespoons Red Wine Vinegar
      • 1 Tablespoon Balsamic Vinegar
      • 1 Tablespoon Extra Virgin Olive Oil
      • 1 Teaspoon Salt & Freshly Ground Black Pepper
      • 1 1/2 Cups Cherry Tomatoes (Halved)
      • 3/4 Cup Fresh Parmesan Cheese (Shredded)
      • 1/2 Cup Red Onion (Thinly Sliced)
      • 1/3 Cup Fresh Basil (Julineeded )


  1. In a pan of boiling water, cook pasta according to package’s instructions. In the last 2 minutes of cooking stir in asparagus. Drain & set aside.
  2. Meanwhile, in a large bowl, add oil, vinegar and pepper and beat until well combined. Add pasta mixture and remaining ingredients and toss to coat well before serving.
