      • 1/4 Cup Extra-Virgin Olive Oil
      • 2 Large Yellow Onions (Thinly Sliced)
      • 2 Large Shallots (Thinly Sliced)
      • 1 Teaspoon Dried Thyme
      • 1 Teaspoon Salt & Freshly Ground Black Pepper
      • 2 Tablespoons Sherry Vinegar
      • 1 Cup Dry White Wine
      • 2 Teaspoons Onion Powder
      • 1/4 Cup Fresh Chives (Minced)
      • 1 Cup Sour Cream
      • 1 Cup Greek Yogurt


  1. Preheat oven to 425 degrees.
  2. In a cast iron skillet, heat the olive oil over medium-high heat and saute the sliced onions, shallots, and thyme, about 5 minutes. Season with a 1/2 teaspoon of salt and pepper. Transfer the skillet to the oven and roast for 30 minutes, or until the onions are golden brown.
  3. Deglaze the skillet, with the vinegar and wine and roast for another 15 minutes.
  4. Transfer the onion mixture to the bowl of a food processor until smooth, and transfer to a clean bowl.
  5. Combine the onions, with the onion powder, chives, sour cream and yogurt and stir to combine well. Season with the remaining salt & pepper.
