      • 1/2 Cup Peanut Butter
      • 2 Tablespoons Dark Brown Sugar
      • 4 Cloves Garlic (Minced)
      • 2 Teaspoons Fresh Ginger (Peeled & Grated)
      • 1 Teaspoon Red Pepper Flakes
      • 1 Large Orange (Zested & Juiced)
      • 1/4 Cup Soy Sauce
      • 1/4 Cup Vegetable Oil
      • 1 1/2 Pounds Boneless Chicken Thighs (Cut Into 1-Inch Wide Strips)
      • 1/3 Cup Salted Peanuts (Roughly Chopped & Roasted)
      • 1/4 Cup Fresh Cilantro Leaves (Roughly Chopped)


  1. In a small bowl, mix peanut butter, sugar, garlic, ginger, red pepper, juice, zest, soy sauce. Reserve 1/3 cup and pour remainder in a large, resealable plastic bag. Place skewers in a bowl of water to soak at least 30 minutes.
  2. Add chicken to the bag and seal. Shake well and refrigerate for at least 30 minutes.
  3. Meanwhile, preheat grill to 350 degrees and coat grates with oil. In a large bowl, transfer chicken and discard marinade.
  4. Thread 2 pieces of chicken on each skewer and grill until chicken in browned and cooked through, 2-3 minutes on each side. Use the reserved marinade to baste the meat while cooking.
  5. Place skewers on a bed of steamed rice and top with peanuts and cilantro. Serve with remaining marinade.
