Chicken Cordon Bleu Recipe

This upgraded version of the classic chicken cordon bleu is spiked with paprika and a rich white wine sauce. Swiss cheese and slices of ham are rolled into the chicken, breaded and pan-seared in butter, and then served with a creamy sauce. Try it with a glass of American barleywine. So delicious!

      • 4 Skinless, Boneless Chicken Breast Halves
      • 4 Slices Of Swiss Cheese
      • 4 Slices Of Ham
      • 1/8 Cup All-Purpose Flour
      • 1 Teaspoon Paprika
      • 1 Tablespoon Butter
      • 1/4 Cup Dry White Wine
      • 1/2 Teaspoon Chicken Base
      • 1/2 Tablespoon Cornstarch
      • 1/2 Cup Heavy Whipping Cream


  1. Pound chicken breasts into 1/4-inch thickness and place a slice of cheese and ham on each breast. Roll up the chicken breasts and secure with toothpicks. In a small bowl, mix together flour and paprika and then coat the chicken evenly.
  2. In a large cast-iron skillet, heat butter over medium-high heat and sauté the chicken for 8-10 minutes on each side or until cooked through completely. Add wine and chicken base and stir to combine. Reduce heat to a simmer, and continue to cook covered for about 30 minutes. Transfer the chicken to a platter and discard the toothpicks.
  3. Combine the cornstarch and heavy cream, stirring until a thick sauce is formed. Stir this sauce into the pan sauce and stir until the mixture becomes thick and glossy.
  4. Serve the chicken with a healthy dollop of the pan sauce.
