Greek Easter Eggs Recipe


Greek children dye red Easter eggs, to commemorate the blood of the Crucifixion. Instead of using artificial dyes, make your red Easter eggs the traditional way: with onion skins! Boil red onion skins in a vinegar solution, and it creates a dye that will turn your boiled eggs various shades of red. Use them for decoration or a lovely Paskha bread.

Ingredients

      • 12 Large Eggs (At Room Temperature)
      • Skins From 15 Red Onions
      • 2 Tablespoons White Vinegar
      • 4 1/2 Cups Water
      • 2 Tablespoons Olive Oil

Directions

  1. Add onion skins, water and white vinegar to a saucepan and bring the mixture to a boil. Reduce the heat, cover the lid and let it simmer for 3o minutes.
  2. Strain the mixture and allow to cool in a bowl at room temperature.
  3. Add the strained dye and eggs to a saucepan. Bring the mixture to a boil. Reduce the heat to low, cover the pan and simmer for 12 to 15 minutes.
  4. Remove the eggs and place them on a rack to cool.
  5. Once cooled, coat the eggs with olive oil or polish with the paper towel. Refrigerate until use.
