      • 1 1/2 Cups Monterey Jack Cheese (Shredded)
      • 1/2 Cup Queso Fresco
      • 1/2 Pound Chorizo
      • 2 Cloves Garlic
      • 3 Tablespoons Butter
      • 1 Teaspoon Salt & Freshly Ground Black Pepper


  1. Preheat the oven to 350. Combine the shredded Monterrey Jack cheese and crumbled queso fresco in mixing bowl. Set aside.
  2. In a skillet, melt 3 tablespoons of butter over medium heat, and brown off the ground chorizo. Add the minced garlic. Cook for another 2 minutes, until the garlic, is fragrant. Season to taste with salt and pepper. Remove skillet from heat.
  3. Combine the chorizo and cheese in a large casserole dish and bake in the preheated oven for 10 minutes until the cheese is golden brown.
  4. Rest the dip for at least 5 minutes before serving.
