      • 2 Tablespoon Extra-Virgin Olive Oil
      • 1 1/4 Pounds Italian Sausage Links (Sliced Into Coins)
      • 1 Medium Onion (Chopped)
      • 1 Medium Carrot (Chopped)
      • 1 Large Potato (Peeled And Chopped)
      • 2 Cloves Garlic (Minced)
      • 1 Bay Leaf
      • 31 Ounces Cannellini Beans (Drained)
      • 1/4 Teaspoon Salt And Freshly Ground Black Pepper
      • 1 Large Bunch Fresh Broccoli Rabe And Greens (Chopped)
      • 2 Quarts Chicken Stock


  1. In a 6-quart Dutch oven over medium-high heat, heat oil and saute sausage until brown on all sides, about 10 minutes. Add onions, carrots & potatoes and cook until onions start to soften, about 5 minutes. Add rabe and stir until it wilts, another 5 minutes.
  2. Stir in stock and cover the Dutch oven. Increase heat to high and bring to a boil. Reduce heat to low and simmer until veggies are tender, about 15 minutes.
