      • 3 Cups Water
      • 2 Pounds Baby Yukon Potatoes
      • 1 Teaspoons Salt
      • 1 Teaspoon Freshly Ground Black Pepper
      • 1 Fresh Bay Leaf
      • 1/8 Cup Extra-Virgin Olive Oil
      • 2 Tablespoons Chives (Finely Chopped)
      • 1 Clove Garlic (Finely Grated)
      • 1/4 Teaspoon Salt
      • 1/4 Cup Grapeseed Oil
      • 1/8 Cup Extra-Virgin Olive Oil
      • 1/8 Teaspoon Cayenne Pepper
      • 1 1/2 Tablespoons Fresh Lemon Juice
      • 1/8 Teaspoon Freshly Ground Black Pepper

      • Homemade Aioli
      • 1 Large Egg (Yolked)


  1. In a Dutch oven, combine the potatoes and a bay leaf in boiling salted water, and simmer for 20 minutes. Or until the potatoes are fork tender. Drain and reserve a 1/2 cup of cooking liquid. Set aside.
  2. In a small saucepan, drape a kitchen towel and place a small metal bowl in the middle. In the small bowl, add egg yolk, garlic, 1/4 teaspoon salt and 2 teaspoons water. Whisk continually while drizzling grapeseed oil in, one teaspoon at a time until mixture is thickened. Keep whisking while adding olive oil in a slow stream. When the mixture is thick & creamy, stir in cayenne, lemon juice, and pepper.
  3. With a potato masher, mash the potatoes and mix with 1/4 cup olive oil and reserved liquid. Place the saucepan over medium-high heat and cook until potatoes are heated through, stirring constantly for 2-3 minutes. Remove from heat and stir in half of the aioli. In a large serving bowl, transfer potatoes and top with remaining aioli. Garnish with chives.
