Grilled Calamari and Herbed Olives Recipe

      • 1 Pound Frozen Squid (Thawed)
      • 2 Tablespoons Extra-Virgin Olive Oil
      • 1/2 Teaspoon Sea Salt
      • 1/4 Pound Garlic-Stuffed Olives
      • 1/4 Pound Whole Kalamata Olives
      • 1 Small Bunch Rosemary
      • 1 Small Bunch Oregano
      • 1/4 Teaspoon Red Chili Flakes
      • 1 Large Lemon (Halved)


  1. Spray a grill pan with a light coating of cooking spray and preheat to medium-high. Meanwhile, pat the squid bodies dry with paper towels, and toss with 1 tablespoon of oil and salt.
  2. On a large sheet of aluminum foil, arrange the olives and top with rosemary, oregano, and chili flakes. Drizzle with the remaining oil and fold the foil into a tight bundle. Transfer the foil bundle to the preheated grill, and cook for 8-10 minutes. In the last few Place foil pocket and lemon halves (cut side down) on the grill and cook until warmed through, about 8 minutes.
  3. In the last few minutes, arrange the squid on the grill and cook until tender and slightly charred, about 1-2 minutes per side.
  4. Combine the grilled calamari and warm olives in a large serving bowl, and squeeze with fresh lemon juice.
