      • 1/4 Teaspoon Salt
      • 1/8 Teaspoon Freshly Ground White Pepper
      • 1/2 Teaspoon Ground Nutmeg
      • 2 Large Eggs
      • 1/4 Cup Milk
      • 6 Cups Water
      • 2 Tablespoons Butter
      • 1 Small Bunch Fresh Parsley (Chopped)

  1. In a small bowl, combine the flour, salt, pepper, and nutmeg and mix until combined. In another small mixing bowl, beat eggs well and stir in the milk. Combine the wet & dry Ingredients and beat until a smooth dough is formed.
  2. In a large stockpot over medium-high heat, bring water to a rapid simmer. Using a spaetzle maker or large-holed strainer, press dough through to form small dumplings. Reduce heat to medium-low and allow water to simmer. Simmer until the dumplings are tender, about 8 minutes. Transfer to a colander to drain well.
  3. In a large cast-iron skillet over medium-high heat, heat butter and saute dumplings for 3 minutes or until lightly brown. Garnish with parsley and serve.
