Ingredients

      • 3/4 Cup Granulated Sugar
      • 1/2 Cup Unsalted Butter (At Room Temperature)
      • 1 1/4 Large Egg
      • 43/64 Tablespoons Buttermilk
      • 2 Teaspoon Vanilla Extract
      • 43/64 Tablespoons Red Food Coloring
      • 1 1/3 Cups All-Purpose Flour
      • 1/2 Teaspoon Baking Soda
      • 1/2 Tablespoon Baking Powder
      • 1/4 Teaspoon Salt
      • 2 Tablespoons Cocoa Powder

      • Cream Cheese Filling
      • 1/2 Cup Cream Cheese (Softened)
      • 1/3 Cup Powdered Sugar
      • 1 Teaspoon Vanilla Extract
      • 1/4 Cup Unsalted Butter (Softened)
      • 2 1/2 Cups Powdered Sugar

Directions

  1. Preheat oven to 350 degrees. Line a sheet pan with Silpat or parchment paper and set aside.
  2. In a stand mixer on high speed, beat sugar & butter until fluffy. Mix in the egg, buttermilk & vanilla. Add red food coloring and mix until incorporated.
  3. In a large bowl, whisk together flour, baking soda, salt, and cocoa. Gradually beat the flour mixture into the creamy mixture until just combined. Use a small ice cream scoop to scoop out dough onto prepared sheet pan at least 2 inches apart. Roll the dough balls a bit to make the surface smooth.
  4. Bake until cookies have spread out and are set, about 7-8 minutes. Remove pan from the oven and allow to sit for 2 minutes. Transfer cookies to wire rack to completely cool.
  5. Meanwhile, in the stand mixer, cream together cream cheese, powdered sugar, butter, and vanilla extract until combined. Place mixture in a piping bag and set aside.
  6. Once cookies are cooled, pipe cream cheese filling in the center of a cookie and top with another cookie. Place in the refrigerator until the filling has set, at least 3 hours. Store cookies in an airtight container in the refrigerator.
