      • 1/4 Cup All-Purpose Flour
      • 2 Cups Italian Seasoned Breadcrumbs
      • 1 Teaspoon Red Pepper Flakes
      • 4 Medium Boneless & Skinless Chicken Breasts
      • 3 Large Egg Whites (Beaten Lightly)
      • 2 Tablespoons Extra-Virgin Olive Oil
      • 2 Cups Jarred Pasta Sauce
      • 1 1/2 Teaspoons Salt & Freshly Ground Black Pepper
      • 1 Cup Shredded Mozzarella Cheese
      • 1/2 Cup Grated Parmesan Cheese


  1. Preheat the oven to 350 degrees. Meanwhile, in a shallow bowl, combine flour, breadcrumbs and red pepper. Stir to combine and set aside.
  2. Arrange chicken breasts in the middle of two sheets of plastic wrap, and pound with a meat mallet until each breast is about 1/4 inch thick. Dip each piece of chicken in the egg whites, allowing any excess liquid to drip off and then coast generously with breadcrumb mixture.
  3. In a cast iron skillet, heat the olive oil over medium heat and brown the chicken breasts for about 3 minutes per side. Arrange the chicken in a large casserole dish, and top with pasta sauce and shredded cheeses.
  4. Bake for 20 minutes in the preheated oven, or until the cheese is golden brown and delicious.
